• Summer cooking: For healthier nutritious summer salads, sprinkle nuts and or dried berries over fresh garden
vegetables.
• Samantha’s beach dinning summer tips:
What are the keys to a successful beach dining experience? Most importantly: ORGANIZATION! We as a family are
very blessed with a beautiful local beach club. If it’s not raining (and even sometimes when
it is!) we dine al fresco beach side. Being a busy mom, I have mastered the art of having a well-stocked picnic bag, and
fridge, resulting in a quick exit from house to beach. So here is what works for our family;
Picnic bag essentials;
- outdoor plates
- cutlery
- tablecloths
- tablecloth clips
- candles
- plastic glasses/wine glasses
- napkins
- wine opener
- tongs/BBQ scraper/BBQ lighter
- meat thermometer
- small kitchen garbage bags
- Ziploc storage bags to keep all these items organized
We keep our picnic bag close by the kitchen. When we finish our meal all the dirty plates/cutlery etc. gets put into a
kitchen garbage bag. When we arrive home it goes right into the dishwasher, then put back
clean in the picnic bag. So it is ready for the next outing.
Every three days we purchase three different meats and marinate them in Ziploc and pop them in the fridge. We make
three different salads, like a pasta salad with tomato and arugula, a couscous salad with peppers and lemon, and a
potato salad loaded with fresh herbs and crème fraîche,
then a bunch of veggies perfect for the grill with some olive oil and balsamic. When you’re heading to the beach you
grab your meat, salad, and veggies and off you go. Have fun and enjoy!
