Savory Summer Salads...and tasty treats.
I'll admit it, when it comes to cooking I don't follow recipes very much.
I'm more of a spur of the moment and just wing-it type of cook. I'll see what's in
the fridge and pantry and go from there. When I do groceries, I'll just buy what
inspires me at the time.
I would like to share with you my basic summer salad recipe,
but please feel free to add your own ingredients variations,
its really that simple.
Maddy's "O" So Easy to do Summer Salad...
-Baby Fresh Romaine salad
-Salmon ( a nice piece of BBQ salmon, hot off the grill)
-A pack of health nut mix; this one contained, currents, peanuts,
cashews, and sunflower seeds
-Mixed veggies consisting of cooked, corn, green beans, peas
and carrots
-Mandarins, fresh or just use the fruit snack pack size
-Avocado slices
Place the lettuce in a large salad bowl, layer the veggies, then
the salmon pieces, layer the avocado slices around the edge of
the bowl, sprinkle the health nut mix, pour the poppy seed dressing
over the presentation and your ready to eat!
Variations;
• You can substitute the salmon for, Chicken, Streak, or tofu.
• You can substitute the nut mix for just pine nuts,
(or none if you have allergies)
• You can substitute the veggies for a three bean mixture.
• Add crumbled feta cheese for a zesty treat and twist!
• You can even embellish your salad presentation further by
adding a fresh edible flower to each serving.
Miy "Sweet Summer Salmon BBQ Sauce";
(this recipe is for one salmon piece,
simply double and adjust the recipe per the
each additional piece of salmon)
- 1 tablespoon of Butter
- 1/3 cup Brown Sugar
- 2 teaspoons of Worcestershire sauce
- 1/4 cup of Heinz Chili sauce
- A squeeze of fresh lemon juice
- A dash of, salt, pepper, garlic salt
Melt the butter, and place all the ingredients in a bowl, combine together
with a spoon, spread over the salmon with a spoon or
brush, and let the salmon cook, and apply more sauce on the
other side when you turn it over.
My Poppy seed salad dressing;
1 cup of Olive oil
1 tablespoon of balsamic vinegar
2 teaspoons of poppy seeds
2 teaspoons of sugar
2 teaspoons of fresh lemon juice
1 teaspoon of Dijon mustard or mustard powder
and add.....A dash of, salt, pepper, garlic salt
Place all the ingredients in a shaker or vinaigrette jar with
a lid, shake and pour over the salad, as much or little as desired!

• I love summer cooking
because its truly basic
and so easy.
This is a typically Canadian
Summer time meal at home or at
the cottage...
-Corn on the cob,
-Garden fresh green peas in a pod,
-Garden fresh yellow beans,
-New potatoes.(my favorite)
Serve with or without a nice juicy
piece of steak.
I can eat a whole meal of just the
garden fresh veggies...just love
them!

• My secret to outdoor dinning...is to keep it simple, from basic foods with minimal preparations to simply and yet stylish tabletop settings....all for a delicious feast for the eyes and tummy! "Enjoy!".
